Elderberries

Heavy clusters of elderberries are one of the gifts of autumn bounty.

The project has received support from the university, and partnered with organizations like Halifax Public Libraries, the Nova Scotia Rainbow Action Project, and the Elderberries social group for LGBTQ Atlantic Canadians over 50.

We’re looking to try and expand and get around an additional 20 acres to plant elderberries and things you can’t really buy and you get from the wild.

Also from the liver category came supremely silky mousse de foie de volaille, which was served with fermented elderberries and a bouquet of purple clover (oxalis).

Guest singers this year include soprano Jenny Manners (a member of the St Michaels Church Choir and the Shalfleet Shanty Singers) and tenor Bob Everson (who sings with Wight Harmony and the Elderberries).

Heart Beet Organics flavours its kombucha with organic, locally-grown fruits like elderberries.
