Ovenproof

Insert ovenproof meat thermometer so tip is centered in thickest part of beef, not resting in fat or touching bone.

Lay half the bread in the bottom of a small, ovenproof dish, scatter over half the meat, and top first with the remaining bread and then the remaining meat.

Butter the base of a 20 × 26cm ceramic baking dish (or a round, ovenproof dish of a similar size) with the soft butter.

Scrape the fruit and any juices into a 9- or 10-inch ovenproof skillet and spread evenly.

If you don’t have an ovenproof skillet you can make it in a traditional loaf pan, but keep in mind that you’ll have to increase the baking time to 70 minutes.

Transfer the filling to an ovenproof dish and top with the mash.

Transfer the filling mixture to ovenproof dish.
